Prep Potato Skillet Ingredients
Start making this easy dinner by prepping a few of your ingredients.
If you don’t have any bacon leftover from breakfast make some bacon however you prefer to cook it. I like to bake it on a sheet pan in the oven at 400 degrees F for about 25 minutes. Use some parchment paper for easy clean up.
While the bacon is cooking you can measure out your seasonings, shred cheese if necessary, and get your potatoes ready.
Peel the russet potatoes, wash them, and cut them up into cubes.
Make BBQ Cheeseburger Potato Skillet
Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika. I don’t use exact measurements for this part. Just be sure they are well coated in oil and seasonings.

Cook the potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook.
If you don’t have an air fryer you can bake the potatoes in the oven at 400 degrees F for about 25-30 minutes, or until the potatoes are cooked how you like them.
If baking the potatoes, it helps to stir them once about half way through cooking.
Next, heat a skillet over medium high heat. Add the ground beef to the skillet with a chopped onion.

Season with salt, pepper, ground mustard, onion powder, garlic powder, and smoked paprika.
Once the beef is fully cooked, drain any extra grease. Add the minced garlic and BWW Honey BBQ sauce. Stir everything well.

Once the potatoes and ground beef are cooked combine them together in the skillet and top with shredded Colby Jack cheese, cooked crumbled bacon, and some crispy fried onions.
I used Kinder’s crispy fried onions because I like the flavor they give, but any store bought crispy onions will work in this recipe.
Put the skillet in the oven at 400 degrees F for just a couple of minutes to melt the cheese.
If you don’t want to turn on your oven you can also leave the skillet on the stove and put the lid on to melt the cheese.

Serve BBQ Cheeseburger Potato Skillet
Once the cheese is melted it’s time to eat! Top with more BBQ sauce if desired.
I served this with an easy Caesar salad kit and fresh fruit for the kids! It was a big hit and will definitely stay on our dinner rotation.
