Griddle BBQ Chicken and Potatoes

It’s made with potatoes, chicken, seasonings, BBQ sauce, shredded mozzarella cheese, and green onions. Making it on the griddle keeps the clean up super easy!

Ingredients
- 5 small/medium potatoes
- olive oil + salt, pepper, garlic powder, and paprika (for potatoes)
- 1 lb chicken breasts, cut into cubes
- Olive oil
- 1/2 tsp each of salt and pepper
- 1 tsp each of smoked paprika, garlic powder, and onion powder
- 1 tbsp minced garlic
- 1/2 cup of Buffalo Wild Wings Honey BBQ sauce
- 1 cup shredded mozzarella cheese
- 2 green onions, chopped

Make BBQ Chicken and Potatoes
To start making this recipe, prep your potatoes. Peel, wash 4-5 small to medium size potatoes, and cut them up into cubes.
Next, toss the potatoes in a large bowl with olive oil, salt, pepper, garlic powder, and paprika (I don’t use exact measurements for this part).

Heat a griddle over medium-high heat and add the potatoes to the griddle. Add more oil as needed and continue flipping the potatoes/stirring as they cook. My potatoes cooked for about 20 minutes.
While the potatoes are cooking, add some cubed up chicken to the bowl.
Season the chicken with 1/2 tsp each of salt and pepper, 1 tsp each of smoked paprika, garlic powder, and onion powder.

Add the chicken to the other side of the griddle over medium heat. Add some oil to the chicken if needed.
Once chicken is finished cooking add the minced garlic and about 1/2 cup of Buffalo Wild Wing’s Honey BBQ sauce. You can really use as much or as little BBQ sauce as you’d like!
Stir together well and turn the heat off that side of the griddle.

Top the cooked potatoes with the BBQ chicken. Add the shredded mozzarella cheese and cover with a griddle dome for just a few minutes to melt the cheese.
Serve BBQ Chicken and Potatoes
Once the cheese is melted, it’s time to eat! Top with some chopped green onions.
I served this with an easy salad kit!

You’ll love this recipe because it’s made with minimal ingredients, can be made in about 30 minutes, and is easily customizable!
Tips and Frequently Asked Questions
- I used Buffalo Wild Wing’s Honey BBQ sauce, but you can use your favorite brand!
- If you aren’t a fan of BBQ Sauce this would also be good with Buffalo sauce or Parmesan Garlic sauce!
- I like making this recipe outside on my griddle, but if you don’t have a griddle it can easily be made inside using your stove and an air fryer/oven. Check out my BBQ Chicken and Potato Skillet recipe for those instructions.
- I used shredded mozzarella cheese, but you could use Cheddar, Colby Jack, or even Pepper Jack cheese instead. I prefer to shred my cheese from blocks for a better consistency! This is the cheese grater I use and love it!
- I used smoked paprika when seasoning the chicken because I like the smoky flavor with the sweet BBQ sauce, but you can use regular paprika if you prefer.
