Pancake Breakfast Casserole

This has all of the flavors of a McGriddle from McDonald’s in an easy and convenient breakfast casserole.

Ingredients
- Pancake mix
- Water
- Bacon, cooked & chopped
- Breakfast sausage, browned
- Shredded colby jack cheese
- Maple syrup
- Butter, melted

Make the Easy Pancake Breakfast Casserole
First, cook 1 lb of breakfast sausage and 1 lb of bacon. Drain the grease well from both and chop the bacon into small pieces.
My preferred way of cooking is bacon is on a sheet pan in the oven at 400 degrees F for about 25 minutes. Use parchment paper for easy clean up!
In a large bowl mix together 4 cups of any just add water pancake mix with water. I used Pattiโs Good Life Buttermilk Pancake and Waffle Mix, but you can use your favorite brand or make it homemade.
If using a different pancake mix I suggest mixing 4 cups of pancake mix following the directions on the box.

Next, add the shredded cheese, bacon, sausage, and maple syrup. I like to keep a little bit of the cheese, bacon, and sausage separate to add to the top the breakfast casserole, but that is optional.
Stir all of the ingredient together well.

Spray a 9×13 baking dish with cooking spray. Add the pancake mixture to the baking dish. Top with the reserved cheese, bacon, and sausage.
The pancake casserole will bake at 375 degrees F for about 35 minutes or until a toothpick comes out clean from the center of the pancake casserole.
Serve the Pancake Casserole
Once a toothpick comes out clean, it’s time to eat! Brush the pancake breakfast casserole with a little bit of melted butter if desired!
Top a piece with more maple syrup and enjoy!

This can be served with fruit and tater tots or hash browns on the side! The leftovers of this recipe reheat really well in the microwave.

Tips and Frequently Asked Questions
- Any just add water pancake mix will work for this recipe or you could use homemade pancake mix. I suggest mixing 4 cups following the directions on the package of pancake mix you use. I used Patti’s Good Life Buttermilk Pancake mix while testing the recipe.
- I used regular breakfast sausage, but you could use maple flavored or spicy for a little kick of heat.
- I did not add eggs to this casserole to keep the texture light and fluffy, but you definitely could! Check out my bacon, egg, and cheese pancake casserole here for how to incorporate eggs into this recipe!
- If I was going to add eggs to this recipe I would whisk together 4 eggs and stir them in with the rest of the mix-ins.
- Shredding your own Colby Jack cheese from a block will help the cheese melt better and not be oily, but you could use shredded cheddar instead!
- To cut down on prep time in the morning I suggest making the bacon and sausage the night before. Mixing together the pancake mix with the bacon, sausage, cheese, and syrup doesn’t take long at all.
