This Red Velvet Poke Cake is an easy and delicious dessert recipe perfect for all of the Holiday parties!

Poke cakes are one of my favorite desserts. This one is made with a box of red velvet cake mix, cheese cake pudding mix, cool whip, shaved chocolate, and Christmas sprinkles.

Ingredients

  • Red Velvet Cake Mix + ingredients needed to make cake
  • 4 cups of milk
  • 2 boxes of cheesecake instant pudding mix
  • 8 oz tub of cool whip
  • Chocolate (shaved or chips)
  • Christmas sprinkles

Make Red Velvet Poke Cake

To start making the poke cake, mix together and bake the Red Velvet Cake Mix in a 9×13 baking dish following the directions on the box.

Once the cake is baked and a toothpick comes out clean, use a spoon to poke holes all over the cake.

Mix together the cheesecake instant pudding mix and 4 cups of milk following directions on the packaging.

Red Velvet Poke Cake

Pour the pudding mix over the cake before it completely thickens.

Smooth out the top of the cake/pudding, cover, and let chill in the refrigerator for at least 2 hours.

Once the cake has chilled, spread an 8 oz tub of cool whip over the cake.

Serve the Red Velvet Poke Cake

Top with shaved chocolate (I used a grater and a Hershey chocolate bar) or you could use mini chocolate chips. Top with Christmas sprinkles and serve immediately. Enjoy!

Tips and Frequently Asked Questions

  • Cheesecake or vanilla flavored instant pudding can be used in this recipe.
  • Any brand of Red Velvet Cake mix should work for this recipe.
  • I used a grater on a Hershey chocolate bar for the shaved chocolate, but you could also use mini chocolate chips.
  • If using Christmas sprinkles, the longer they sit on the cake in the refrigerator they may start to bleed their colors. I recommend adding the sprinkles right before serving.
  • Keep any leftovers in the refrigerator.
  • Crushed oreos would also be good as a topping.
