Grinder Salad Tortellini Pasta Salad
Grinder Salad Tortellini Pasta Salad is one of my all time favorite side dish recipes for summer BBQ’s and get togethers. If you’ve ever had the viral grinder Salad sandwiches this one has all those same flavors, but in pasta salad form.
This recipe is easy to throw together and prep ahead of time, and easily able to be customized to add in your family’s favorite ingredients.

Ingredients
- 1 cup of mayo
- 2 TBSP of red wine vinegar
- 1/2 tsp of salt
- 1 tsp of dried oregano, Italian seasoning, and garlic powder
- 1/2 tsp of red pepper flakes
- 1/3 cup pepperoncinis peppers drained
- 1/3 cup of shredded Parmesan cheese
- 1/2 of a red onion chopped
- 19 oz Frozen cheese tortellini
- 8 slices of bacon cooked and chopped
- 1 heaping cup grape tomatoes sliced
Make Grinder Salad Tortellini Pasta Salad
First, cook bacon however you like making it! I prefer to bake it in the oven on a sheet pan lined with parchment paper at 400 degrees F for 20-25 minutes.
Once the bacon is cooked, drain the grease, chop it into small pieces and set it aside.
Next, boil cheese tortellini on the stove following the directions on the package. Drain and rinse with cold water and set aside.
In a large bowl, mix together mayo, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes. Stir well.
Add cooked cheese tortellini, pepperoncinis peppers, 1/3 cup Parmesan cheese, the chopped red onion, sliced tomatoes, and chopped bacon.
Stir everything together well.
Serve Grinder Salad Tortellini Pasta Salad
Once the pasta salad is all combined refrigerate for at least an hour and serve! Enjoy!
Tips and Frequently Asked Questions
- I used a 19oz bag of frozen cheese tortellini.
- I love the bacon in this recipe, but you could swap that out for some chopped pepperoni and/or chopped salami.
- I used pepperoncinis, but you could use banana pepper slices if you like them better.
- I prefer to bake the bacon in the oven at 400 degrees F for 20-25 minutes on a sheet pan lined with parchment paper.
